What is Ceylon tea?

Ceylon tea it is not a specific species, but a protected geographical indication, like champagne from Champagne or parmesan from Parma.

This means that Only tea grown and produced on the island of Sri Lanka can be called this. It's the unique microclimate, fertile soil, and monsoon rains that give the leaves of the tea bush (Camellia sinensis) their unique character. The tea industry in Sri Lanka is an art refined over generations, and its authenticity guarantees the highest quality.

Is Ceylon tea the same as black tea?

This is a common question. The answer is: yes and no.

Black tea is a general type of tea, determined by the production process (full oxidation of the leaves). Ceylon tea is a tea (most often black, although green and white are also produced) coming from a specific place – Sri Lanka.

So we can say that every black Ceylon tea is black tea, but not all black tea is Ceylon teaIt's its origins that give it its unique flavor profile and make it so prized by connoisseurs.

A Brief History in a Cup – How Coffee Gave Way to Ceylon Tea

The history of tea in Ceylon is as fascinating as its taste. Before the island became a tea empire, it was dominated by coffee plantations.. Everything changed in the 1860s when a devastating fungus (Hemileia vastatrix) destroyed almost all coffee crops, bringing the island's economy to the brink of bankruptcy.

Then he entered the scene Scottish planter James Taylor, who established the first commercial tea plantation in the Kandy region in 1867. The experiment was a resounding success. Sri Lanka's climatic conditions were ideal for the shrubs. Camellia sinensisOver the decades, the island has transformed into one of the world's largest tea producers, and Ceylon tea has become synonymous with the highest quality.

How is Ceylon tea different from other teas?

The fundamental difference lies in the so-called "terroir" – the unique combination of climate, soil and altitude that defines the final taste and aroma of the brew. Ceylon tea stands out from other, often more astringent or earthy teas in several key ways.

Delicate but distinct taste

Ceylon black tea famous for its extraordinary balance. It is not as heavy as some Assam teas, nor as smoky as Lapsang Souchong. Its taste is full, fresh, often with a noticeable, subtle hint of a slightly citrus aroma. This makes it incredibly versatile – it tastes delicious both on its own and with the addition of milk or lemon.

Variety of flavors depending on the altitude of tea cultivation

Sri Lanka offers diverse conditions for growing tea, which translates into a wealth of flavors. High-grown teas, i.e. from the highest plantations, are the most valued. They are characterized by a lighter infusion and a more delicate, floral flavor. The lower it goes, the stronger and darker the tea becomes.

How to brew Ceylon black tea?

This is a tea with a classic flavor that loves a higher temperature.

  • Water temperature: Use fresh, soft water at a temperature of approximately 95°C.
  • Quantity: Standardly, one flat teaspoon of dried herb per cup (approx. 200 ml).
  • Time: The optimal brewing time is 2-5 minutes.
    • Shorter brewing time (2-3 minutes) will give a more stimulating infusion.
    • Longer brewing (4-5 minutes) It will release more tannins, creating a more tart and relaxing brew. Be careful not to steep too long to avoid bitterness. Long steeping can make Ceylon tea difficult to drink.

  • Water temperature: This is the most important element. The water should be much colder, in the range 70-80°CNever pour boiling water over green tea – you will “scald” the leaves and the infusion will become bitter.
  • Quantity: Same as with black – one teaspoon per cup.
  • Time: Green tea is brewed for a much shorter time, usually 1-3 minutesHigh-quality leaves can be brewed multiple times, revealing slightly different flavor notes each time.
