🌿 Delicate MATCHA CAKE with a pistachio accent is a dessert that combines the oriental note of green tea with the creamy consistency of a traditional cheesecake.
It has a subtle, tea-like flavor, offset by the sweetness and slightly nutty aroma of pistachio butter. Perfect for special occasions – it looks elegant yet is easy to prepare.
Bottom
- Grind the cookies into powder.
- Mix with melted butter.
- Spread the mixture on the bottom of a springform pan (22–24 cm), pressing it in thoroughly.
Cheese mass
- Place the following in a bowl: cheeses, mascarpone, eggs, sugar, flour, matcha latte and 1 tablespoon of pistachio cream.
- Blend (in a powerful blender or Thermomix) until smooth and pour onto the prepared base.
Baking
- Bake at 180°C (top-bottom) for approx. 40 minutes.
- After baking, leave in the oven with the door ajar until completely cool.
Cooling
Place the cheesecake in the fridge for at least 6 hours, preferably overnight.
Decoration
- Spread a thin layer of pistachio butter on top (about 2 tablespoons).
- In a separate bowl, whip the mascarpone with 50 g of cream and a packet of matcha latte until fluffy.
- Pour the cream on top of the cheesecake and spread gently.
- Garnish with fresh mint and edible flowers.
