Can waffles be delicate, fluffy, and aromatic all at the same time? Absolutely! We present Marzena Król's recipe for exceptional pistachio waffles with a hint of Rose & Cardamom loose-leaf tea. The combination of nutty pistachio flavor with floral-spicy tea creates the perfect combination for summer afternoons. These waffles will delight you with their crispy exterior and soft interior!

Ingredients

Waffle dough:

  • 2 eggs
  • 260 g wheat flour
  • 100 g pistachio flour (pistachios ground into flour)
  • 2 teaspoons of baking powder
  • 125 g mascarpone
  • 50 g melted butter
  • 4 tablespoons of sugar
  • 350 ml of milk
  • 2 tablespoons Adalbert's Rose & Cardamom loose leaf tea (ground in a mortar and sieved)

Pistachio cream:

Preparation


  1. Separate the egg whites from the yolks. Set the egg whites aside—you'll beat them last.
  2. In a large bowl, combine the milk, mascarpone, egg yolks, melted butter, and sugar. Mix until smooth.
  3. Add the dry ingredients: wheat flour, pistachio flour, baking powder, and loose leaf tea powder . Mix until you have a fairly thick batter (that's how it's supposed to be!).
  4. Beat the egg whites with a pinch of salt until stiff.
  5. Gently fold the egg white foam into the batter with a spatula - do not mix too vigorously to prevent the batter from losing its fluffiness.
  6. Preheat the waffle iron.
  7. Pour in portions of the batter and bake for about 4-5 minutes, until the waffles are golden and crispy on the outside and soft on the inside.

Serve with whipped cream and mascarpone, fresh fruit (strawberries, cherries), Cremolandia pistachio cream and chopped pistachios for even more crunch.
